There are reportedly around 300 types of köfte in Turkey. Some are served as a single main dish. Others hide inside stews or soups. The key is texture. You want something that holds together but doesn’t feel like a brick. This recipe for kıymalı pirinç köftesi tarifi (rice meatballs with minced meat) hits that sweet spot. It’s practical. It’s comforting. And it’s easier than you might think.

Here is how to make them without the guesswork.

The Ingredients List

You don’t need a pantry full of obscure spices. Just basics that play well together.

  • 250 grams of rice
  • 150 grams of minced meat (kıyma)
  • 2 eggs (plus one extra for washing)
  • 2 tea glasses of grated kashar cheese
  • 1 onion
  • 15 grams of butter
  • ½ cup of breadcrumbs
  • Vegetable oil for frying
  • Salt

Step-by-Step Preparation

Start with the rice. This is the foundation. If the rice is too hard, the balls fall apart. If it’s too soft, they turn to mush.

  1. Boil the rice. Use enough salted hot water to cover the grains completely. Cook until they are soft but still intact. Drain them well. This step is non-negotiable. Wet rice makes a soggy binder.
  2. Prepare the base. While the rice cools, take two of your eggs. Add one tea glass of the grated kashar cheese. Mix it into the warm (not hot) rice. The residual heat melts the cheese slightly, creating pockets of flavor. Spread this mixture on a wide tray. Let it cool completely. Cold rice is easier to handle.
  3. Cook the filling. While the rice tray cools, chop the onion. Melt the 15 grams of butter in a pan. Add the onion. Sauté until translucent. Add the 150 grams of minced meat. Cook until browned. Add a pinch of salt. Let this mixture cool down. You don’t want hot filling melting your cheese-coated rice ball instantly.
  4. Shape the meatballs. Take a spoonful of the cooled rice mixture. Roll it into a ball in your palm. Press your thumb into the center. Create a well. Think of it as a little cup.
  5. Add the meat. Place a small amount of the cooled meat-onion filling into the well. Seal the rice around it. Roll it back into a sphere. Press it down slightly to flatten it into a patty shape. This helps it cook evenly.
  6. The coating. You need a barrier. First, dip the patty into the beaten egg white. Then, roll it in the half-cup of breadcrumbs. This crust protects the rice from breaking apart in the oil.
  7. Fry. Heat vegetable oil in a pan. The oil should be hot but not smoking. Fry the meatballs until golden brown on all sides. Remove them. Place them on paper towels. This sucks up the excess grease. You want flavor, not a mouthful of oil
